Faster than take out: Meals for busy Moms

We’ve all been there and done that. We have come home from a long day with hungry kids and all we wanted was a hot bath alone and dinner already on the table – at least a Subway sandwich. Well here you go mamas. This meal is faster than ordering ordinary delivery from a place like Foodpanda and I promise, it’s much more tasty. Although everyone can agree that when you don’t feel like cooking, delivery tastes just fine. This is one of my favorites though, it doesn’t disappoint and that’s why it’s become my go-to meal! Grab your favorite noodles and get started.

Baked chicken with noodles and homemade cream sauce….

Toss 3 Tyson (frozen) grilled chicken breast in the oven for 20 minutes.

Throw your favorite noodles in a pot of water and boil. Sprinkle some salt in there so your noodles don’t get sticky!

In another pan melt two tablespoons of butter. Add a half a cup of chicken broth, and a cup of heavy whipping cream. Go ahead and squeeze a couple drops of lemon juice if you’re a lemon girl. I definitely am! Add your favorite savory cheese. Mine is mozzarella. Yum!! Mix together on a low heat until the cheese melts.

Grab your favorite oven-friendly pan. Spray it with pam or put some butter in the bottom. Put them noodles in the pan. Spread them out however suits you. 😉 Pour the melted sauce on the noodles. Grab the chicken from the oven (I just use a toaster oven for these). Slice them and put them on top of the pasta and sauce.

For you lemon-lovers, cut a lemon and put the slices over the chicken breast or in the corner of the pan for added flavor while baking.

Put the pan which now includes pasta, sauce, chicken, and lemons, into the oven at 400 degrees for 5 to 10 minutes just to lightly bake it. Even better if you shred some more cheese and put it on top before baking but not necessary.

Take it out of the oven and serve hot because that is when it truly melts in your mouth.

Mama, you have had a hard day. You are tired and you deserve a hot bath. Your kids are hungry and they probably have homework they need help on which includes math problems that you have not seen in 20 years. It’s all ok. Make a toasty hot pasta and give yourself time in the bath. Put your feet up and relax. You are a mama which aside from everything else, is the hardest, most rewarding job in the world.
